Five reasons why you should be meal planning and prepping right now

If you are like me, maybe you have ran out of that giant box of Cheez-it’s and that Easter candy you were eating for breakfast, and now your stomach has voiced their concerns about your recent choices. If you’re getting lectured by your stomach, you are likely also getting some sideways glares from your budget.

I have a ton of other posts about meal prep for your reading pleasure, but I’ve also shared my top reasons below for why I want you all to join me right now and plan your food for the week ahead.

  1. Much like a budget tells your money where to go, meal planning and prepping does the same for your food, so it helps reduce waste and food boredom. It’s one thing to buy groceries and it’s a whole other thing to prepare and eat the groceries you buy. (Yes I’m talking about that old bag of greens that are going bad in your crisper drawer right now as you read this or that chicken that’s been thawing with no current plans to actually make it to the dinner table)
  2. It reduces the stress of “what are we eating and how will we eat it” and makes it one less thing to worry about. Don’t we all need that right now?
  3. I already mentioned the mental wellness above, but let’s not forget about financial wellness and physical wellness that comes with a healthy balanced diet that you just can’t find at the bottom of that Cheez-it’s box. (trust me on this..I looked)
  4. It reduces the amount of meals you have to think about. If you make a batch of food, just double or even triple the amount, and voila..now you have turned one meal into three. Do that a few times and your whole week of food has been figured out and all you have to do is warm it up and eat it.
  5. It’s grill season. Grill season is the BEST time to start or renew your love for food and prepping. We have so many different dietary restrictions in our house from two carnivores, a pescatarian and a vegetarian, but the grill is where we can all go and get fed from one meal without issue. It’s so easy to toss some cut up veggies in olive oil and seasoning and make a veggie foil pouch right next to some steak, chicken, fish, tofu or whatever you want to grill. I don’t know if it’s me, but food also just tastes better from the grill. Bonus..you can either enjoy family time outdoors while grilling or use the grill and prep as an escape from the family for a bit..depending on how your family is acting that day.

A few of my favorites right now include honey garlic salmon with a mixture of mushrooms/onions/cauliflower cooked in a foil pack and cauliflower in any seasoning with a salad. I’m also going to try a brussel sprouts/sweet potato/pepper combo next with lemon garlic tilapia and chicken for the boys.

What are some of your meal prep tips and favorite grill meals or make in bulk meals?

Three Thrifty Travel Tips

Nobody likes listening to Linda talk about her travels to literally wherever she wants whenever she wants when all you can afford is to travel your ass to the couch in your living room. So let’s stick it to Linda and become world travelers if for nothing else but to have stories for Linda at the water cooler on Monday. Here are the 3 things that matter the most when considering your travel strategy.

1. Where you go matters. It also matters what time you plan to go. For example, some of my favorite trips have been to the mountains in the off season, like early Fall for hiking. Everything is reduced usually, including cheaper flights, AirBNB rates, and even those trusty Colorado souvenirs you want to pick up. So a good key is, if everyone else is going to this same place at the same time, don’t be like everyone else. Also, just because Linda is spending three weeks hiking in Rome, it doesn’t mean that your trip is less travely if you pack up the car and take a quick long weekend road trip to the next state over. Travel is travel is travel and it’s about experiencing something new, not about a competition of who can get the farthest from the zip code they reside in.

2. What you pack matters. I once made it to Jamaica for a six day trip with only a carry on. Being intentional with what you pack will help with expenses and time. (no extra bags or overweight charge, or maybe a smaller car is ok to rent without oodles of luggage) Don’t be afraid to pack one pair of jeans to wear multiple times or leave those super uncomfortable six extra pairs of shoes at home and pack that one pair you know will get you through site seeing blister free. Now that you know what to leave behind, let’s pack the essentials. A reusable water bottle is a necessity, and just make sure you empty it out before security. Now, if you are traveling, you can save a TON by packing some snacks and quick meals. If we are road tripping, we bring things we usually don’t eat, like chips and a loaf of bread and peanut butter for easy sandwiches. Grab some travel ready fruit like apples and oranges and some baby carrots and you have several meals and snacks. Yes I know Linda is posting all her gourmet meals on Insta, but remember, you can go out to one or two quality meals to experience the local cuisine and totally get the same foodporn ammo to post..just cheaper and likely a bit healthier also. (Linda leaves out the part about that 5 extra pounds she brought home as a souvenir)

3. Where you stay matters. Find a place that jives with your agenda nicely. If you are just looking for some time to chill and enjoy a nice hot tub or swim and don’t have a rental car, then maybe a hotel makes sense. If you will be out soaking up all the free local attractions, then AirBNB on the outskirts of the city will probably be a great fit. You can pick a place based on amenities and the proximity to what you want to do. Closer isn’t always better, especially on the budget. But if they have free breakfast, dinner, coffee, and tea, well then, it may in fact be a great choice. Or if you are bringing stuff like we do, then make sure you have a kitchen area to prepare those on the go meals. I know Linda only stays in 5 star all inclusive resorts, but let’s remember kids, you are paying a premium for all that inclusion, even the stuff you won’t be using. So give a no inclusion, off the beaten path, quirky little cottage a try and you may discover that it’s even more enjoyable.

What is it that you are looking to get out of your next trip? For me, traveling is always a time to unplug, explore, try new things, and spend quality carefree time with my family. So regardless of where you go, how you get there, or what you bring, don’t be like Linda. Be unique, and don’t lose site of your why. Safe Travels!

My 2020 Vision

When you stop and reflect..only to realize you went through the all the previous decades you’ve been in existence without goals, you decide to make up for lost time by going BIG.  Not that I have ever really gone small at anything ever, but it’s different.  Something about this year reminds me that whatever I think, whatever I envision, and whatever I write down is mine.  I don’t have that “one day” or “maybe next year” or “I wish” or “must be nice” mentality any more.  I know who I am and what I am capable of and create the shit out of some positive energy.  I am not locked and loaded with excuses that “I don’t have time” or I can’t afford it” either.  I know that I have time for the things that I make time for and I am in control of my money and tell it where to go.

Last year was just a tiny taste, a sip of what my life can really be like and I’m back for more.  I have decided that this will be the BEST DECADE EVER!!  I came up with my goals back in December, but since I’m an ever-evolving person..lol..I wanted to give them a few weeks to simmer before I put them out into the world.  I am now ready to share, and I have decided that 20 goals for 2020 is only appropriate.  My list is below and you know the drill..ask me questions and would love to hear your 2020 goals!!

Reflecting on 2019

There will be a whole 365 days in 2019 for us to have set goals, have taken action, worked hard, and to have crushed those goals. Year end is a great time to throw modesty out the door and recognize how great your year was and how awesome you are for all that was accomplished.   If you did the work, then I don’t care who you are, you deserve to celebrate, so go on..brush your shoulders off.

If you instead stayed on the couch all year again, and your biggest accomplishment was only gaining 10 lbs from all the junk you ate while binge watching all the Netflix original series..well then..might be good to reflect on that also.   Still playing the “victim of your situation” game and convincing yourself that you can’t change or grow because “insert your excuse here”.  Did that binge or pity party help you or hurt you?

Not trying to brag below I promise you..just trying to prove that you CAN do big things if you set big goals and are ready to take action and put in the work.   You can and should think differently about life and the pursuit of happiness..question things and don’t just do what everyone else is doing because it’s easy.  Also, I’m sharing some stuff that makes me feel vulnerable and gives a private look into some events in my life over the past year.

If you’re not ready to grow and celebrate success, then please stop reading this and head back to your latest Netflix binge. If you are ready, but not sure where to start, start by grabbing a pen and paper and write down everything you accomplished this year that makes you feel proud to tell others and makes you feel like you have grown as a person.  Then go share it with the world!!

See my list below:  My 2019 Accomplishments

  1. Started MySemiBasicLife.com blog and InstaGram account
  2. Grew organically from 150 followers to 1250 followers
  3. Helped teaching my youngest to read and my oldest to read and rehearse lines for a major part in a play
  4. Bought 1st rental property end of March 2019
  5. Bought 2nd rental property in August 2019
  6. Bought 3rd rental property in December 2019 (this one with a full cosmetic rehab)
  7. Was a guest on not one, but two podcasts, and submitted an idea to one of my favorite podcasts, and got to speak with the producer and provide input on a new series (can’t share any more info..sworn to secrecy..lol)
  8. Became debt free after selling our cars and paying off the remaining of our $165,000 in consumer debt. Nobody to impress now that I’ve changed my value system and if I don’t have the cash for it, then I’m not buying it.
  9. Completed a No Spend Year of no clothes, shoes, accessories, purses, makeup, haircuts/dye. Turns out I don’t give a shit what others think of me after all, and I don’t need makeup or new clothes to try and impress anyone.  “Letting myself go” in the eyes of society by not wearing makeup, rocking my grey hair, and not buying the latest clothing trends feels a lot more like getting comfortable in my own skin.  I’ve never felt prettier on the inside and out then I do right now.  I also learned to cut my own hair..not getting accepted into cosmetology school anytime soon..lol, but I can do it and it’s fun and free.
  10. Joined a real estate mastermind group and joined a local real estate investors group and have networked and made several great connections in the industry
  11. Attempted my first seller finance deal (didn’t work out but was a great learning experience and made some new connections in the process)
  12. Helped land a few really big accounts at work that required a lot of work and were out of my comfort zone
  13. Was matched with a little sister through Big Brothers/Big Sisters and continued to volunteer on the family selection committee for Habitat for Humanity
  14. Survived a lot of loss including losing a good friend to glioblastoma, losing my dog of 17 years, losing a terminal puppy we adopted, a dwarf hamster, and a pet rat. Lastly, there was an advanced stage breast cancer diagnosis for my mom with lots of biopsies, dr visits, chemo rounds, lots of soups/casseroles and will be leading in to surgery/radiation/hormone replacement in 2020.
  15. Started a gratitude journal that I write in every night.
  16. Started a daily morning meditation and manifesting the life I want practice.
  17. After my leg injury finally healed, was back up to running over 5 miles until I got bit by the neighbor’s dog..lol
  18. Stopped two nasty habits that I have battled on/off for years, smoking and drinking.  I still occasionally have a beer or drink, but not like I used to and have been smoke free since 6/1/19!!  I’m now focused on enjoying my current situation more and building a life I don’t need to escape from.  No judgment to my friends that are still doing these things..just doesn’t fit in my life any longer.
  19. I read 45 books this year!!
  20. Experienced 6 figure net worth growth through all of the above focus, hustle and sacrifice

Wow..I DID ALL OF THAT IN ONE YEAR??!!  I did notice that I didn’t have as much of a focus on my marriage or kids this past year, and plan to make sure I am placing more focus on those areas of my life in 2020.  Of all of those accomplishments, I am most proud of the self love and belief that I can do anything..because clearly I can after seeing my list!!  Also, with the belief in myself, I have noticed my risk tolerance is completely different.  I am ready to take on risks instead of turning away from them, because I know I will learn and grow from any mistakes, so bring them on!

Did you write a list of goals at the beginning of 2019 that you can compare your end of 2019 accomplishments to?  If not, no worries, because  I didn’t write any goals out at the beginning of the year either.  2020 marks the beginning of a new decade and new opportunities to start fresh for all of us.  Make it the year you stop saying “someday” and finally replace it with today.

Anyone else brave enough to share their year in review??!!

Shout out for NO SPEND SATURDAY

Is it just me, or have you noticed that the less you spend, the more freedom you have to enjoy yourself?!

No stress of watching your hard earned money leave your bank account or worrying about if you got someone the right thing or if it’s the right size or color or whatever the many stressors that come with shopping are. No stress about how the other bills are going to get paid now that you decided to make this purchase, or the extra hours it will take to cover what you spent. I know that when I spend money, the dynamic changes. I now have expectations and pressure to make sure it’s a fun time or a good meal or the best most memorable gift. Maybe it’s just me, but if I take spending out of the equation, then I literally don’t have to worry about it. It then becomes about enjoying the moments and making memories with my peeps.

The weekends, and especially those leading up to the holidays are HARD. Everyone has a deal going and all of our senses are inundated with smells of candles or food, seeing a must have item advertised for $5 off, touching all those soft blankets and stuffed animals, hearing the ads and workers at the store telling us today is our last chance, etc. This is all that most of us are used to..our society has been like this for as long as I can remember, and as long as we continue to consume at the rate we do, nothing will change. We truly have to make an effort to avoid, so if you are able to stay strong on any shopping front, you are winning. A great way is to start with a No Spend day or weekend. Another great way to do so is 1) to set a Holiday budget and 2) stick to it. Know who is on your list, know how much you want to spend, and make sure you have the funds to cover any of this. If not, your family and friends would much rather you bake some cookies, or spend time with them than to have you go into debt to show your love. Trust me on this one!!

Who else left their stress at home and their money in the bank today? Any other tips for surviving the holiday season?

Intro time

Intro time! I want to learn more about all of you, so please share as little or as much as you want. I will get it started. 👋

My personal residence in the Kansas City area is what I call “the zoo”. Always lots of dogs and kids running in and out and if the garage is open, then let yourself in. 😉

I have two awesome kids..one who is learning to read and the other is reading lines in her latest city theater play. I have a very patient and supportive husband, with a beard, who breaks gender stereotypes by cooking, doing dishes, AND the laundry. 🧺

A few hobbies include meditating, yoga, running, reading, writing, eating but not cooking, and volunteering on the board for Habitat for Humanity and as a big for big brothers and big sisters. I work for an insuretech company and my degree is in sociology with a minor in psychology and I LOVE people watching. 👀

When I look back on what we’ve done this year since I started mysemibasiclife, it’s been a journey of finding our values, embracing minimalism, doing a No Spend Year, paying off $165,000 in debt, buying two rental properties, and continuing to build wealth through diversification. 💰

My goal is to help you take control of your mindset and financial future, so you can design a life and a legacy to leave your mark on this world. 🌎

I’m an open book, so ask me any questions and tell me about yourself. 👯‍♀️

No more tampons..period

Let me tell you something that’s going to blow your mind. I used tampons for a good 20 years of my life, and much like all the other topics I write about, I did it because everyone else was and I literally didn’t know there was another way. Sure there are pads if you want to throwback to your diaper days and feel disgusting for a week out of every month..ummm..hard pass. I still remember in great detail my struggles as a teen learning how to install my first tampon with the super unhelpful directions and diagrams that come with the box. Even after twenty years of practice, it still never felt like it was installed right. 🤷‍♀️

Imagine my surprise about four years back when another woman casually mentioned to me her menstrual cup. Ummm..excuse me..are you getting a drink for your vagina or something?? WTF is a menstrual cup?? Better yet, why has nobody told me, your fellow woman, in all these many menstrating years, that there were other options?? I felt like y’all have been holding out on me, and I don’t want anyone else to go even one more cycle without the period knowledge I’m about to flow upon you. Because the menstrual cup is a GAME CHANGER. 💃🏻

How a menstrual cup will change you:

1. Comfort-Seriously..nothing like the feeling of inserting a tampon on a light flow day and having the experience of pulling that bad boy out at the end of the day..ouch. Also, the leaking..the freaking leaking..why do I even bother with wearing it if it’s still going to ruin my underwear? Don’t worry..these are concerns that I have never had with my menstrual cup!!

2. Better Periods-Because if you’re going to have one every month for 40ish years, might as well make it your best version right? I swear that my periods have been shorter and lighter since I stopped using tampons. Also, the cramps are almost gone and bloating has decreased a lot. I really think a lot of period symptoms are due to all the tampons laced with chemicals. ☠️

3. TSS-See my above mention of the chemical and dye soup that is just begging to attract bacteria into your body from tampons. Also, I used to get UTI’s and yeast infections and haven’t had not a single damn one since I stopped wearing tampons four or so years ago. Coincidence? I think not. 💁‍♀️

4. Convenience-I used to change tampons every 2-4 hours, and first I had to find another tampon, go buy one if I’m out, and sometimes the only option is the gas station sandpaper ones, and then next was go install it and find a trash bin for the applicator and wrapper. Now I simply just have to bring myself and my cup, and only empty it out every twelve hours. So I do it when I wake up and when I get home..that’s it. I’ve never had it leak during a run or downward dog, and no it doesn’t look like a murder scene when I empty it like the menstrual cup memes make you think. I’ve had one incident where I spilled, and I cleaned that shit up like a good murderer and went about my day. No evidence. No big deal. I would however advise you to leave your four year old son out of the public bathroom with you if you need to empty, because well, they have questions, and loud voices, and they tell EVERYTHING to EVERYONE.

5. Mother Earth-Did you know that each of us menstrating women generates 1,000 lbs of waste in our lifetime from tampons, and the applicators take 500 years to break down?! Ditch the tampons for the turtles!

6. Money-If you go through the average 12,000 tampons in your lifetime, then you will also spend around $4,000 in total. Go get you a $30 menstrual cup that will last you ten years, and invest the rest. Throw that money into a Roth IRA instead of a landfill. 💰

Alright..I know you have questions and I’m not shy..so ask away. 😉

The Debt Epidemic

🚨Keepin it real rant ahead🚨

This is us..this is America..scary huh? What if I told you that we are all responsible for this culture of debt and living above our means and we all have to contribute to putting an end to this. It’s hurting us, our kids, our health, our planet, it’s an epidemic and I wish more people were feeling terrified about the topic. It just keeps getting worse each year, small credit card purchases, car payments, student loans, slowly adding up to over $13 trillion. 💳

Who’s ready to break the cycle?? And I don’t mean just pay off the minimums and maybe a little extra to continue to be a slave to debt for the rest of your life. I don’t mean to just do a debt consolidation or home equity loan or line of credit to pay off..because debt is still debt..whether it’s paying ten different people or paying one. And now that you’ve consolidated, guess what, you’re probably just going to add MORE debt now that you’ve freed up those credit cards. 🤷‍♀️

Your past will continue to haunt you if you aren’t ready to take a long hard look in the mirror and realize that YOU created this mess, and YOU have to do the hard work to not only get out of it, but STAY out of it. You have to STOP talking about how you don’t make enough money, you’re just barely scraping by and don’t have any extra to pay, maybe once you pay off the car or once you get that tax return you will, or once you get a raise you will, you are lying to yourself. STOP playing the victim and STOP making excuses for your spending habits. You’re only hurting yourself.

Also, those student loans, yeah those suck just as bad as the credit cards, but you CHOSE to go to school and you took them out, so guess what? You owe it..so PAY that shit back already!

YOUR kids SEE you living that lifestyle, and they HEAR you fighting about money, and they FEEL your stress at the end of the month when there’s not enough paycheck to go around. They see you treating yourself “because you earned it”, and they are learning that shopping makes everything better..new stuff will take away that rough week..only it wont.

Harsh words, but let me ask again..who’s ready to break the cycle??

Seven FREE Apps to help you become stress free

Ok..so my title may be a little misleading..since becoming stress free is likely impossible. But I needed to get your attention and it sounded catchier than seven free ways to reduce stress. 🤷‍♀️

You guys..it’s 2019 and we KNOW that we are all living with a more demanding schedule causing a more stressful life AND it has been proven to have an impact on our health. Some studies say that as many as 80% of people are feeling both physical and psychological effects of stress, such as fatigue, headache, stomachache, muscle tension, anxiety, nervousness, irritability, and sleep disturbances, just to name a few. Do you currently feel stressed?

I keep talking about minimizing the demands on your time and that as a society we need to stop glorifying “being busy” as a status symbol of success, but are you listening?! We also need to start ditching unhealthy coping mechanisms, like drugs, cigarettes, over or under eating, alcohol and my personal favorite..the art of ignoring your stressors until you have a nervous breakdown.

You guys..can we please try to be proactive instead of reactive already?! I’m not begging you, but pretty damn close, because this is that important!! I’m even going to make it easy and convenient and FREE for you, so that takes away all of your excuses. Here are seven tools and/or apps to keep in your back pocket, and you should be at minimum doing 2-3 of these things in your day to day, and holding on to the rest for those extra stressful days.

1. Headspace-this app reminds me of Notorious BIG and the song Hypnotize. 🎶 sometimes your words just hypnotize me 🎶 This app has helped to hypnotize me both to get to sleep at bedtime, and then back to sleep middle of the night when my brain was ready to party. 🧠

2. YouTube yoga videos-there are SO many videos that it’s likely you could watch a new video each day for the rest of your life. Depending on you and your unique coping, you may need either a restorative gentle video or an intense vinyasa flow. Or maybe you fall in the middle..but just don’t fall in the group that doesn’t take advantage of the free yoga available and go get you some zen! 🧘‍♀️

3. Journaling-Daylio, Jour and Reflectly seem like good journaling apps, or if you’re like me, you can always just grab one of those random notebooks around your house and write it out (don’t act like you don’t have a hundred of them).

4. Music-ok so my AppleMusic isn’t free, but the radio is, or YouTube music videos, or Spotify or Pandora. Make yourself a few playlists..one for high stress and needing some good vibes and high energy, and another for relaxing music to calm your soul.

5. Walking/Running-no app required..just the outdoors or a treadmill. But if you’re looking for coaching, the C25K app or the Nike Run Club are both apps I love and use!! Bonus points for grabbing a dog to take with you, they get stressed to you know.

6. Daily affirmations-I have an app called affirmations, and it’s one of the first things I look at on my phone after I’m up and moving in the morning. I get a new one everyday, and it’s just that daily reminder that you are a bad ass and can handle any of life’s stresses today, so bring it.

7. Reading-I use the Libby app., which syncs with my library card and gets me free ebooks and audiobooks. Nothing like feeling stressed and taking a moment to forget it all and get lost in a good book.

These are all ways to ditch stress and get back to being awesome.

How do you manage stress?

Carnival Season

It’s carnival season around here..one of my favorites for watching my kids just be kids and enjoy some screen free fun time, it’s also my favorite for people watching, and don’t forget the funnel cake.😋 🎡

The one thing I don’t like is how much it all adds up in price..parking, vendors, a ride here, a ride there, games and then of course the drinks and food. 🍕🍦🍿🥤

This year..we just picked one of the three carnivals we usually go to. I also avoided the $10 parking by finding a spot on the street for free. We ate before we left the house and brought our own water.

My best move was convincing my kids the games weren’t as much fun as the rides. Since they only care about the prizes anyway, I told them we would go to Dollar Tree after, and they could pick out any item in the store. They didn’t even ask to play any games, and we even saw another kid asking his parents to play and Caleb told him that “the games were a rip off because they were just trying to take his money to get rich” 😂

We did splurge on the $20 all you can ride wristbands for each kid, and a $5 funnel cake to share, so with my Dollar Tree promise, I was all in for $47. I was proud of this, because we usually spend at least double, if not triple this during carnival season, and we end up with meltdowns about “one more game”, and end up with a bunch of crap toys or stuffed animals we don’t need also. 🧸

To be honest, the spending less part was great, but we had more fun this year with one carnival and without all the extras. Getting used to a more simple minimalist lifestyle gives us a chance to really enjoy the best things in life that have always been free..the memories. 💕
